To Prepare: Beat the eggs in a bowl with vanilla until thick. Heat the coconut oil on medium heat in the frying pan till the oil melts and starts to bubble. Put the mixture of eggs and vanilla into the frying pan and make sure it spreads evenly around the pan. Cook until firm. Fold the omelette well and serve.

Paleo Porridge

Having healthy paleo porridge is a great way to begin your day!

Ingredients: Half cup of quinoa soaked and well rinsed, one cup of almond milk mixed with two chopped dates for sweetening, one-half teaspoon of pumpkin pie spice

To Prepare: Put the rinsed quinoa and almond milk in a pot to boil. After boiling, place on simmer till the quinoa is popped. Add pumpkin pie spice and stir.

Serve it warm or cold as a pudding. You can put baked apple on top to set it off.

Paleo Breakfast Bread

Paleo bread is healthy and easy to prepare in the morning.

Ingredients: Half a cup flax seed meal, 3 cups of almond meal, 4 tsp. coconut flour, 1/4 cup sunflower seeds, 8 whole eggs, 2 tablespoons of vinegar, 2 tablespoon walnuts

To Prepare: Put coconut flour, almond meal and flax in a food processor and pulse them together. Add eggs, vinegar and walnuts and pulse them till well blended. Put butter in a greased loaf tin. Bake for 45 minutes in moderate oven. Serve warm or cold.
